Scattered Sunday…better late than never! :)

Here’s your Scattered Saturday post…on a Sunday. My day yesterday was quite full, with a coffee tasting at a local coffee shop, lunch/shopping date with the husband, nap, and Christmas tree decorating. 🙂 How has your weekend been?

1. Dinner & Dessert

To celebrate paying off our credit cards (woo-hoo!) we took the brother and went out to dinner. A new restaurant just opened in MW that the boys were really wanting to try out…anything new in MW is a BIG thing. 🙂

Here we are eating at Fuzzy’s Taco Shop…I was totally digging the outdoor garden vibe. Exposed brick walls, ivy climbing, twinkle lights in the trees…oh to have a backyard like that. (A girl can dream right?!)

I begged him not to put the “butt burning” sauce on his food. But do you think he listened to me?!

Afterwards we crossed the street to Hayes Station…which is an adorable old fashioned ice cream parlor. Super cute & very tasty. I had a pumpkin latte AND a scoop of vanilla ice cream.


And then I felt sick afterwards from eating so much. 😛

2. Spice Cake Pumpkin Muffins / Cupcakes

I decided to try out a new Pinterest recipe that a friend of mine recommended…and it was so festive & yummy! They would be delicious as muffins for breakfast or as a dessert with buttercream icing on top. So versatile!

Here’s all you need: Spice Cake dry mis (from a box) & a big can of pumpkin (or 2 little cans)

If you want to frost it, then choose a flavor that you think will complement the yummy goodness…I chose buttercream!

3. Here’s a quicky, easy, and tasty Thanksgiving side dish…guaranteed!

I made this for our home-group Thanksgiving, and everyone agreed it was a winner. Thanks Pinterest!

Corn Casserole<br />

To make this corn casserole all you need is:

– can of corn, drained

– can of creamed corn

– 8 oz. box of Jiffy corn meal

– 1 cup sour cream

– 1/2 cup butter

– 1/2 to 1 cup shredded cheddar cheese

Mix it all together, put it in a 9×13, and bake at 350 degrees for 55 minutes.

4. If you can’t go to P.F. Changs…then bring it home to you!

I tried another Pinterest recipe for lunch today, and if you love P.F. Changs lettuce wraps then you’ve got to give this one a try for yourself. Super yummy!

So there ya go! A few new recipes to try & restaurants to try if you are ever in MW. 🙂 This will be a short work week (*Hallelujah!) and I’m looking forward to time with the family and decorating for Christmas. Not to mention a few fun posts I’ve got up my sleeve… 😉
